Grandmas Buttermilk Chess Pie
1 1/2 cup sugar
1 cup buttermilk
3/4 cup Nora Mill Grandmas Biscuit Mix
1/3 cup melted butter or margarine
1 tsp. vanilla
3 eggs
Preheat oven to 350° F. Beat all ingredients together
until smooth. Pour into greased 10-inch pie plate. Bake for
about 30 minutes or until toothpick inserted into center comes
out clean. Cool completely before serving.
Basic Grits Recipe
1 cup grits
3 cups water
salt and margarine to taste
Bring 3 cups of water (add salt and butter at this time) to a rapid boil in a heavy saucepan. Add grits and stir until water boils again. Lower heat to a simmer, cover and continue cooking for 20 minutes stirring often and adding water if necessary. Add salt and butter if you have not already done so.
Nora Mill Easy Cornbread
2 eggs, beaten
1/4 cup vegetable oil
1/2 cup creamed corn
1 cup (8 oz) sour cream
1 cup Nora Mill Cornmeal (white or yellow) PLAIN
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
Combine first 4 ingredients in a medium bowl. Add the rest of the ingredients and mix until completely blended. Pour into a well greased iron skillet or muffin pan and bake for 25 to 30 minutes at 400 ° F. (** If using self rising cornmeal - omit baking soda, salt, and baking powder).
Buttermilk Cornbread/Stix Mix/Muffin Mix
~Muffins/Cornsticks~
Beat 1 egg until light. Add 1 cup buttermilk or plain milk and 2
teaspoons liquid shortening. Blend well, then add 1-1/2 cups
Nora Mill's Buttermilk Cornbread/Stix Mix/Muffin Mix. Blend
until all lumps are gone. Pour into well greased muffin tins or
cornstick pans. Bake at 450 ° F for 20-25 minutes or until golden
brown.
Hushpuppy Mix
~Suzie's Special Hushpuppies~
Beat 1 egg with 1/2 cup buttermilk (regular milk is fine,
although buttermilk produces a lighter hushpuppy). Add 1 cup
Nora Mill Hushpuppy Mix and 6 tablespoons finely chopped onion
(optional) to liquid ingredients and mix well. Drop by teaspoons
into 375 ° F oil, cook until golden brown. Turn once.
Pioneer's Porridge
Bring 3 cups of water to a boil with 1 teaspoon salt. Add 1 cup
Nora Mill Pioneer's Porridge, stirring constantly for 3 minutes.
Let simmer 20-25 minutes, stirring occasionally. Serve with
butter, white or brown sugar, honey, raisins or nuts-just like
you'd serve oatmeal!
The Miller's Gravy Mix
Mix 2/3 cup Nora Mill Gravy Mix with 1/2 cup cool water until
well blended and most particles are dissolved. Add mixture to
1-1/2 cups boiling water. Cook and stir continuously until
bubbly. Reduce heat and serve.
Funnel Cake Mix
~Mrs. Helen Wagner's Funnel Cakes~
4 cups Nora Mill's Funnel Cake Mix
2 cups water, Vegetable oil
Large skillet, 8oz. funnel
2 spatulas
Add 2 cups water to 4 cups Nora Mill's Funnel Cake Mix and stir
until smooth. Heat oil in a deep skillet to 350 ° F. Pour batter
into a funnel, holding a finger under funnel until ready to
pour. Holding funnel about 2 inches from hot oil, let batter
pour out, shaking funnel gently and moving in a slow circular
motion. A lattice design is a popular method of forming a funnel
cake. Brown evenly 45 seconds on the first side, and 30 seconds
on the second side. Remove funnel cake with 2 spatulas and drain
on paper towels. Sprinkle with powdered sugar or top with your
favorite fruit or canned pie filling.
Spoonbread Mix
~Traditional Spoonbread~
1 cup Nora Mill's Spoonbread Mix
1-1/4 cups water
Combine mix with 1/3 amount water, stir thorughly. Add remaining
water in 3 stages, stirring after each addition. Fill greased 1
quart casserole dish 2/3 full. Bake in 450 ° F oven for
approximately 30 minutes or until brown. Serve directly from the
baking dish with plenty of butter. Makes 2-3 servings.
Cornmeal (White or Yellow)
~Southern Cornbread~
Stir together 1 & 1/2 cups Nora Mill's Plain Cornmeal, half
teaspoon baking soda and one teaspoon salt. Combine 1 cup
buttermilk, 1/4 cup vegetable oil, 1 egg and mix dry and liquid
ingredients. Bake in well - greased iron skillet or muffin tins
at 400 ° F for 20-25 minutes. Omit baking soda and salt if using
Self-Rising cornmeal.
Grits (White or Yellow)
~Cheese Grits~
1 cup cooked Nora Mill's Grits
1/2 cup chopped onion
3 tablespoons melted margarine
1/2 teaspoon garlic, minced or powdered
1/4 cup milk
1 large sausage patty, cooked and crumbled
3/4 cup parmesan cheese, shredded or grated
1 beaten egg
Mix ingredients together and bake in a well greased dish in a
pre heated 300 ° F oven for 40 minutes.
Crispy Mountain Batter Mix
~Onion Rings~
1 Cup Nora Mill's Crispy Mountain Batter Mix
3/4 Cup of cold water
Large onions (you can also use zucchini,eggplant, cauliflower or
green peppers)
Cut large onions into 1/4" slices. Seperate onions into rings.
Combine Nora Mill's Crispy Mountain Batter Mix with water. Mix
batter until smooth. Dip onion rings into batter, and drop into
hot shortening (370 ° F), turning immediately and often until
golden brown (approx. 2-1/2 min.). Remove from hot shortening,
drain on paper towels.
Crispy Mountain Batter Mix
~Baked Fish~
1/4 Cup dry Nora Mill's Crispy Mountain Batter Mix
Paper or plastic bag
1 lb. of fresh or thawed fish
Margarine
Moisten fish in water. Pour Nora Mill's Crispy Mountain Batter
Mix into bag and drop fish into bag, shaking bag to coat fish
evenly. Melt enough margarine to cover bottom of a shallow pan.
Arrange fish in a single layer, turning once to coat both sides
with margarine. Bake in a 350 ° F oven 15-20 minutes or until
done.
Grandma's Biscuit & Pancake Mix
~Biscuits~
Combine 2 cups of Nora Mill's Grandma's Biscuit & Pancake Mix
with 1/2 cup water. Mix with fork until blended. Turn out on
floured board and knead 5 times. Roll to desired thickness and
cut with floured cutter. Bake on a shiny cookie sheet in a
preheated 450 ° F oven for 12 minutes. For perfect biscuits, use
a sharp cutter, cut with a straight up and down motion and place
in baking pan close together. Makes 9 biscuits.
Grandma's Biscuit & Pancake Mix
~Sweet Muffins~
Combine 1 egg with 1/2 cup water and blend well. Pour into 1-1/2
cup of Nora Mill's Grandma's Biscuit & Pancake Mix, add 2
teaspoons sugar and stir only until moistened. Spoon into well
greased or paper lined muffin tins. Bake in a preheated 450 ° F
oven for 10 minutes. Hint: You can add blueberries, raisins,
jelly, cinnamon, etc. to this basic recipe. Makes 8 muffins.
~Aunt Lizzies Pancakes~
Beat 2 eggs in a bowl until well mixed. Add 1 cup buttermilk and
2 teaspoons melted butter or margarine. Stir in 2 cups of Nora
Mill's Grandma's Biscuit & Pancake Mix until dry ingredients are
just moistened - leave the batter a little lumpy. Bake on hot
greased griddle, hot enough to make a drop of water dance on the
surface before evaporating. Turn just once when pancakes begin
to lose their gloss and bubbles begin to burst. Makes 10 ( 4" )
pancakes.
3 Grain Pancake, Waffle & Muffin Mix
~3-Grain Pancakes~
Beat 2-3 eggs in a bowl until well mixed. Add 1-1/4 cups
buttermilk or milk and 2 tablespoons melted butter or margarine.
Add 1-1/2 cups Nora Mill's 3-Grain Pancake Mix and stir until
dry ingredients are just moistened ~ the batter will be a little
lumpy. Bake pancakes on a hot greased griddle hot enough to make
a drop of water dance on the surface before evaporating. Turn
just once when pancakes begin to lose their gloss and bubbles
begin to burst. Makes 12 ( 5" ) pancakes.
3 Grain
~Waffles~
2-3 eggs
1-1/4 cups buttermilk
2 tablespoons melted butter
1-1/2 cups Nora Mill's 3-Grain Pancake Mix
Preheat the waffle iron. Separate the eggs. Beat the whites until they form stiff peaks.
Beat egg yolks in a separate bowl, then add buttermilk and butter. Stir mix into milk/egg
yolk mixture until ingredients are just moistened. Fold in beaten egg whites. Bake in waffle
iron following manufacturers directions. Makes 12 ( 5" ) pancakes.
